Gluten-, grain- & lactose free protein buckwheat porridge

I like to have my breakfast warm, big and nutritionous. Especially when I have to work all day long, jumping around in front of the camera, and when I’m working out right after I get home. Or when my muscles are sore from bootcamp or whatever workout I did; I feel my muscles can use some extra protein. On days like this, I like to make myself a large bowl of hot porridge.

Buckwheat is not a grain, it is a seed, coming from China and Mongolia. As you might know, seeds are higher in protein content than granes. Besides, buckwheat is gluten free and full of slowly digestable carbohydrates. These carbs keep your blood sugar level stable and keep you full untill lunch. Together with the omega fats from the nuts, seeds and almond milk and the high values of vitamins and antioxidants in the berries, this breakfast is a great way to start your day in an extremely healthy way. 

By the way, I’ve used almond milk instead of cow milk, because I don’t react well on the lactose in cow milk. Another option to replace the almond milk with, is rice milk. 

So here’s my recipe:

Ingredients

1/2 cup organic flaked buckwheat

1 cup almond milk

15 grams (1/2 scoop) vanilla protein powder

1 egg white

1 teaspoon soaked chia seeds

mix of (dried) berries, seeds and nuts (whatever you like)

3 drops stevia

Directions

Bring the almond milk with the buckwheat flakes to cook. Add the egg, mix well and let cook for 10 more minutes. After turning off the heat, add protein powder, chia seeds and stevia. Leave for 5 minutes to thicken and serve topped with (dried) berry, seed & nut mix.

Tried & tested: AVEDA Stress Fix

My life can sometimes be a real rollercoaster, being exposed to a lot of stress and doing a million things at the same time. My days have been exactly like this lately. So, when finally there was a morning that I had absolutely nothing scheduled, I changed my bathroom into a private spa and locked myself up with Aveda products.

I filled up my bath tub with hot water, lit candles, turned on my Enya cd and sprinkled a handful of Aveda Stress-Fix Soaking Salts into the water. I took off my bath robe, let my toes measure the temperature and slipped into the water. As I let my head sink a little deeper into the water so my ears would be below the surface, I listened to the Celtic sounds that were deformed by the water. This was asking for a short dress with bare legs at the party tonight! I didn´t need to put on perfume, since this lotion has the same aromatic scent as my bath sugars, which I really love. You can imagine, that the party was great and I received a lot of compliments on my legs ;)

Inca berry: an ancient medicinal super fruit

I love to snoop around at the organic market to see what products they have. I heard about it before and last week I finally bought it: the much talked about dried Inca berry! Not without reason: this little man has a very complete nutritional value, has medicinal powers and to top its good properties off: is very tasty.

The Inca berry (a.k.a. cape gooseberry, Aztec berry, golden berry, giant ground cherry, Peruvian ground cherry and Peruvian cherry) is native to Peru, Colombia and Ecuador and grows high in the Andes. In folk medicine, the Inca berry is used to cure cancer, leukemia, malaria, asthma, hepatitis, dermatitis and rheumatism. Not only in folk medicine the Inca berry is associated with healing powers; the Inca berry is getting more and more popular in Western culture due to its positive effects on health.

Nutritional values

The Inca berry is high in protein level (important for people that are on a weight loss diet or people who work out regularly) for a fruit and is the only plant that contains B12 vitamins, which is necessary for generating energy for cellular metabolism. Especially people with a vegetarian or vegan diet tend to lack B12 vitamins.

Besides protein and B12 vitamins, the Inca berry contains the following vitamins and minerals:

High levels of phosphorus 

Besides calcium one of the most abundant minerals in the body, builds strong teeth and bones and is especially important during menopause;

Vitamin A

Slows down premature aging and has a positive influence on acne;

Vitamin C

Anti-ager by helping your body neutralize free radicals, promotes healthy skin, fights and prevents infection and strengthens the immune system by strengthening white blood cells, especially important for people who workout a lot or smoke.

Bioflavonoids

A strong antioxidant, slows premature aging as well, boosts the immune system, possibly improves kidney function on diabetic people, exhibits anti-inflammatory and anti-cancer properties.

Recipes

There are great things you can do with the exotic, sweet tasting, chewy Inca berries. I immediately mixed them through my home made raw super breakfast cereal mix.

Here’s one of my most fav recipes, based on cous cous:

Spiced cous cous with Incaberries

Serves 6

Ingredients:

- 2 cups cous cous - 1 cup Inca berries or more to taste - 2 tbs olive oil - 1 onion, chopped - 2 ts ground cumin - 1 ½ ts ground coriander - 1 ts ground cinnamon - 250g sweet potato, cut into 2cm dice - 1 medium zucchini, cut into 2cm dice - cracked black pepper to taste - ¼ cup chopped coriander, to serve

Method 

Place the cous cous in a large heatproof bowl and top with the Inca berries. Pour over enough boiling water to cover the cous cous and Inca berries, then cover the bowl with plastic wrap.  Heat half the oil in a small frying pan and cook the onion until light  golden. Add the spices and cook for 1-2 minutes then remove from  the heat. Char grill or barbecue the sweet potato and zucchini unitil cooked through then keep warm. To serve, add the remaining oil and use a fork to separate the grains  of the cous cous and incorporate the Inca berries. Fold through the  onion and spices along with the grilled sweet potato and zucchini. Season with pepper, transfer to a serving bowl and sprinkle with  coriander.

Note: The steam in the bowl with the cous cous helps to soften the Inca berries slightly. 

Nutrients per serve  1700kJ energy, 10g protein, 8g total fat (1.2g saturated fat, 1.4g  16g sugars, 11g fibre, 14mg sodium<

Indulgent protein pancake breakfast

Breakfast is one of the most important meals of the days; make this meal a good one, both nutritious and tasty. Let’s start tomorrow: your next breakfast will be a true indulgence! 

When I woke up last morning, I was craving something sweet; I decided to bake myself a pile of pancakes. Healthy pancakes, of course, full of nutrients like good fatty acids, protein, slow carbohydrates, vitamins and minerals. My pancakes were a true delight and kept me satisfied until noon. Here’s my recipe for 2 thick breakfast plate sized pancakes:

Ingredients:

- 2 egg yolks & 4 egg whites

- 2 tbs Aman Prana coconut flour

- 1 tbs vanilla potein powder

- 1 tsp cinnamon powder

- 1/2 cup almond milk

- 1 handful of crushed walnuts

- coconut oil

- fermented sheap or goat yoghurt

- blueberries/strawberries (not on the above picture)

Preparation:

- Break the eggs in a bowl and mix with coconut flour, protein powder, cinnamon powder, cruched walnuts and almond milk.

- Grease a small griddle or frying pan with coconut oil and set fire on medium heat.

- Pour or scoop the batter onto the griddle and heat for a couple of minutes or until the top of the pancake starts to become dry. 

- Carefully turn the pancake over and wait for appr. 2 minutes.

- Glace your pancake with yoghurt and top with cinnamon, cruched walnuts and blueberries/strawberries.

- Repeat for your second pancake.

With my pancakes I had a cup of coffee. As you might know, I am trying to cut back on coffee. I find it quite hard, so I got myself a package of Pacha roastet cichory root coffee. This coffee tastes quite the same as regular coffee, but not coming from the coffee bean and not being decaffeinated, it is caffeine and chemical free. Topped of with a little bit of stevia and a little shot of almond milk makes it a perfect early morning coffee that goes very well with my sweet pancakes.

Stevia: why you should have it in your cupboard

In Europe, untill December 2011, governments banned Stevia to protect their sugar industry. Therefore, for Europeans, Stevia is quite new. For those who still think Stevia is an Australian girls name, here’s a short overview of Stevia and why you should have it in your cupboard.

Stevia is a natural sweetner that is 30 to 45 times more sweet than normal sugar. Being very low in carbohydrates and calories, high in nutritional value and having very little influence on the blood sugar level, it is the perfect substitute for sugar.

Stevia is an extract from the flower leaves from the Stevia herb, which is native to south and central America. In these area’s, the extract has a long history of medicinal use, in the treatment of depression and promoting weight loss.

Stevia is an unprocessed sweetner, unlike normal table sugar, leaving the extract full of rich nutrients like antioxidants, vitamins and minerals. But there are more health benefits to Stevia: studies have even shown that Stevia possibly reverses diabetes by promoting additional insulin production. This makes Stevia diabetic-proof and even beneficial to diabetics. Besides, according to the WHO, unlike table sugar, Stevia is a non-toxic sweetner.

Stevia comes in many forms, like pressed into small tablets, powder and in liquid form. Stevia can be used in many ways: to bake cakes, in your coffee or tea and to sweeten desserts. Being highly concentrated, you’ll only need a few drops when using Stevia in liquid form. I bought mine at Vitaminstore. They have a webshop, where you can buy Stevia online. It costed me € 8,70 for 50 ml, which will be enough for half a year for sure.

Minty granate apple coconut drink

To keep your body hydrated, it is important to drink lots of water. Coconut water is actually an even better choice when it’s a hot day like today. So, today I made myself a drink that contains natural coconut water. To make my drink a real beautifier, I added some extra’s.

Besides coconut water, my drink contains kefir, which is a very strong probiotic, fermented milk drink from the Caucasian. Probiotics are great to regulate the intestinal flora, cleanse the colon and strengthen the immune system. Especially people suffering from acne that is situated mainly on the chin should consider drinking kefir. 

Another beautifying ingredient that I used is chlorella. Chlorella is a plant that grows on the sea bottom and is full of chlorofyl. Chlorella increases the digestive capacity, improves the blood structure and perfusion, restores tissue and cleanses blood and organs. Do your skin a favor by adding chlorella into your diet!

Did you know cinnamon is one of the strongest antioxidants? I’ve put lot’s of it in my drink. 

Now here’s my recipe for a very nutritious, hydrating and refreshing drink:

Ingredients:

- handful of fresh mint leaves

- seeds of half a granate apple

- 1 tbs gojiberries

- 1 tbs mulberries

- 1 tbs seeds (I’ve used chia-, sunflower- and pumpkin seeds)

- 3 drops of stevia

- 1 ts cinnamon

- 1 ts chlorella powder

- 1/2 cup kefir 

- 1/2 cup natural coconut water

Procedure:

  1. Mix the granate apple seeds with the mint leaves and a little bit of water in a blender.
  2. Poor the mix through a sieve into a glass to discard the juice of chuncks that will make your smoothy less enjoyable to drink.
  3. Poor a little bit of the granate apple - mint juice back into the blender and add the gojiberries, mulberries, seeds, chlorella powder and kefir. Blend.
  4. Add the coconut water and blend again.

Your minty granate apple coconut drink is ready to drink now! You’ll notice that some seeds and the berries might not have been blended very well. I personally didn’t mind and actually even liked it. It gave my drink a little extra bite.

A chocolate smoothie makes you lose weight!

I found this really great product at my raw food store. It is called Bio Raw Cacao Nibs, which are raw crunched nibs from the cacao bean. In ancient times, the Aztecs in Mexico treasured cacao for medicinal purposes. Not without a reason: cacao alleviates stress, treats depression (that’s why some people get an euphoric sensation out of eating chocolate), lowers bad cholesterol and raises good cholesterol speeds up metabolism. It is even claimed that it will reduce your risk of cancer, due to its antioxidants. Other nutrients the nibs are full of, are fiber, flavonoids and fatty acids. They lack dairy, sugar and preservatives.

Mattisson (sold at Vitaminstore) is a  good brand to get your raw cacao nibs from. Raw means that food hasn’t been cooked or heat treated to destroy all its precious enzymes, so this cacao still is full of great nutrients.

Here’s a great recipe for a chocolate smoothie:

Yield: 4 cups

Ingredients:

·         1 cup raw almonds, walnuts, macadamia or other nuts

·         4 cups water

·         4 to 6 medjool dates, to taste

·         1/4 cup raw cacao nibsr, or to taste

·         1/2 vanilla bean, seeds only, or 1 tablespoon vanilla extract

·         1/4 to 1/2 teaspoon cinnamon, to taste

·         1/4 to 1/2 teaspoon cardamom, to taste

·         2 bananas, raw or frozen, optional for thickness

·         1 tablespoon raw almond butter, optional for decadence

Home made raw breakfast cereal with mulberries, goji berries, bee pollen, coconut and chia seeds

I am very excited about my home made raw organic breakfast cereal. I think everyone should eat at least a big spoon full of this mix every day. At least, if you want to have a great looking body and skin. This mixture will keep your body strong and energized, feed your muscles, balance your hormonal level, control munching, cure skin problems like acne and dryness, prevent premature aging, promotes radiant skin and will help you to burn fat and slim down.

About the mix

So, what does this power woman breakfast cereal consist of? It consists of raw, biological, dried white mulberries and goji berries, coconut shavings, unsalted and unroasted Brazil nuts, hazelnuts, almonds and walnuts, dried flax seed, chia seeds, pumpkinseeds and sunflower seeds and bee pollen. All very tasty super foods that are model proof ;) and full of vitamins, minerals, fiber, proteins and unsaturated fatty acids.

I bought all the ingredients separately at Vitaminstore and my local EKO market and mixed them all together in a big jar. Every morning I scoop a couple of spoons full of the mixture in my goat yoghurt and enjoy a nutrient bomb that keeps me satisfied for a couple of hours. It’s not necessary to add stevia (off course, we don’t use table sugar anymore!) or cinnamon, since the berries and bee pollen already give this cup of love a sweet taste.

More about the ingredients

Some of the ingredients you probably are familiar with, some of the ingredients are less known by the general public. Therefore, I will detail below these must-eat ingredients and its benefits.

Dried white mulberries: a dried blackberry-like fruit (not a berry as the name suggests) from eastern and central China. Dried, this berry is chewy and has a soft sweet taste. Although this berry has a sweet taste, it is low in calories, against. Mulberries contain many health benefitting nutrients, such as potassium, which helps control heart rate and blood pressure, treats anxiety and stress, increases muscular strength and metabolism and controls water balance. Beside, mulberries are full of iron and flavonoids, which are beneficial to the skin due to their antioxidant activity. Antioxidants helps to protect the skin from harmful free radicals that promote premature aging.

Mulberries are also cure full for bacterial infections and due to its good amounts of vitamin B-6, niacin, riboflavin and folic acid, they help the body in the metabolism of carbohydrates, proteins and fats.

Also vitamin E and A can be found in mulberries, which make these berries an excellent anti-aging, skin dryness and acne treating food.

Dried goji berries: do you remember when I posted a picture on my Facebook Page of myself eating goji berries and chia seeds? I promised to explain what goji berries and chia seeds are, so finally here is my explanation. A goji berry is a small, dried, sweet, red berry from the Himalayan. A goji berry contains more vitamin c and beta-carotene per gram than oranges and carrots. Both beta-caroteen and vitamin C are great nutrients for your skin. The nutritional value of goji berries is quite comparable to mulberries.

Dried black chia seeds: seeds from the chia herb, originally from Mexico. It is said that this plant has been cultivated by the Aztecs. The seeds are high in fiber and protein and contain more calcium per gram (which is important for women in their menopause) than milk. Besides, chia seeds contain omega 3 and 6 fatty acids; omega 3 is an essential oil that controls the blood sugar level. Omega 6 is an essential oil that strengthens the immune system, cures infections and lowers cholesterol. The carbs from chia seeds are released slowly into the blood, which is favorably for the blood sugar level. Chia seeds also contain essential minerals like potassium. Take care that when taking chia seed, drinking lots of water is important.

Bee pollen: sweet tasting bee pollen are the seed found on the stamen of flower blossoms. The pollen have a yellow color and taste sweet, which makes it unnecessary to add a sweetener to your yoghurt. Bee pollen are excellent to add to a smoothie as well.

The early Egyptian and early Chinese civilizations both used it as a physical rejuvenator and medicine. The Greek physician Hippocrates, recognized as the father of modern medicine, used pollen as a healing substance over 2,500 years ago. Today natural health practitioners often refer to bee pollen as an herbal “fountain of youth” that can be used for everything from weight loss to cancer prevention. Bee pollen promote many health benefits, like a better immune function, significant increase in your energy and slow down the aging process.

Bee pollen contain protein, fatty acids, carbs and many antioxidants, vitamins (like A for anti-aging and E for soft skin), minerals and several flavonoids.

More familiar products:

Coconut: the palm tree is called the ‘Tree of Life” in Asian and Pacific populations, due to the high nutritional value and healing function of its fruit. The coconut is the fruit of the palm tree and the coco is the meat of the fruit. The coco is used for many purposes, for instance as a sun protective and for cooking. Coco is rich in fiber, vitamins, and minerals, boosts energy and increases metabolic rate, keeps blood sugar levels balanced,  is a protective antioxidant, softens skin and helps relieve dryness and flaking, promotes healthy looking hair, treats skin infections, kills herpes and treats candida infection.

Brazil nut: actually a seed from the fruit of the Brazil nut tree. Brazil nuts are relatively low in carbs and high in protein and fatty acids. Although Brazil nuts contain the most saturated fatty acids of all nuts, they contain a lot of selenium, which is correlated with keeping the immune system strong and a reduced risk of both breast and prostate cancer.

Brown broken flax seed: seeds from the flax plant, which found its origin in the region eastern Mediterranean to India. Flax seed contains line seed oil, which is a vegetable oil that consists of omega 3 fatty acids. Besides, flax seed is an excellent source of fiber, lignans and protein. Lignans are antioxidants that play a role in estrogen reception.

Pumpkinseeds: pumpkinseeds have great dietary and medicinal properties. The seeds contain phytosterols, which lower cholesterol, and omega-3 and omega-6 fatty acids. Beside, it is a good source of minerals.

Sunflower seeds: contains fiber and omega 6 (also known as linoleic acid). Sunflower seeds also contain tryptophan, which treats depression and nervousness and makes you sleep well. At last, these seeds contain vitamin E, B Vitamins (of which vegans end vegetarians should take supplements) and minerals, of which potassium.

Goat, cow, or soy yoghurt?

To eat my breakfast cereal with yoghurt is like a little present after waking up. My yoghurt comes from goat and is full fat. Normal yoghurt makes my stomach bloat and goat yoghurt is easier to digest. If you don’t like the taste of goat yoghurt, you can also try soy yoghurt, which is free of lactose; lactose is a substance that can decrease the assimilation of nutrients through the intestinal walls. Yoghurt is full of protein, which is an important nutrient when breaking your nightly fast. Its amino acids are the body’s building blocks for all processes in the body, like skin renewal and repairing muscle tissue after a workout. When eating soy yoghurt, be aware of additives that many manufacturers add additives.

The price you pay

You might find out that the products I name are relatively high in price, compared to an ordinary breakfast cereal. This is true, but remember that if you want to take care of your body and treat it in it’s best way, you should be aware of the additives that the commercial manufacturers put in these “convenience foods”. These additives are bad for your waistline and skin, but most important: for your overall health and wellbeing. Therefore you have to make the choice by your own whether you want to pay the price right now, spending it on tasty and healthy foods, or in the future, spending your money on medical bills.

High Protein Foods

Sweety .. eggs aren’t the only high protein source. If you want to have an amazing body before summer, start eating more of the listed high protein sources today!

On this good friday night out, while sipping a good glass of sugary wine, you have decided that from now on, you’re gonna be a good girl. Meaning: work out more often and eat better. Good! Work out more often means you’ll just have to get your ass into the gym more often. So far, so good, right (I think buying yourself a cute new sports outfit will help ;)?

But what about your nutrition? Your gym instructor Mr. Strechy Pants repeatedly tells you to eat more protein, so you stuff yourself with quark. But eating quark every day could become very boring. What you need is a little help to add variety to your diet. Most people know eggs contain eggwhite, which is purely protein, but do they actually know that eggs aren’t the only protein source? I bet yóu do, so for all of the other people that don’t, I have made a helpfull protein source list ;) The list contains foods that are high in protein. Some foods are more starchy, have more carbohydrates or have more saturated fatty acids than others on this list. I have not taken this into account, so if you are following a low carb diet for instance, don’t take the legumes.

You can have (a combination of) one of the foods listed below with every one of your six small meals a day. It is important to eat a great variety of potein and not to get stuck only just on one protein source. As you might know, I am not a big fan of poultry and fish and even less of meat. I chose to list these foods anyway; I don’t want to make the choice whether to eat, or not to eat these foods for you and I want to give you an honest list. I do strongly recommend you to buy MSC-certified fish and biological meat.

So, here’s the list:

Fish

Salmon, tuna, cod, mackeral, sardine, anchovies and shrimp.

Fish-y

Fish roe and -caviar, lobster, octopus and crab.

Lean meats

Sirloan, veil, steak, beef, lamb, pork, wild boar, deer and chuck roast.

Poultry

Chicken breast, turkey, wild pheasant, duck, ostrich and gray partridge.

Eggs


Nuts (non-roasted, non-salted)

Brazil nuts, almonds, hazelnuts, cashew nuts, walnuts and pistachios.

Seeds

Chia seeds, flaxseed, sunflower seed, pine nuts, pumpkin seeds, quinoa, amaranth and sesame seeds.

Legumes

Beans, peas, lentils, peanuts, alfalfa,clover, tempeh (fermented soy beans) and tofu (soy).

Dairy

Cheese, quark and yoghurt.

Other
